California Dairies, Inc. is one of the nation’s largest butter manufacturers with 22 percent of the U.S. butter market share. California Dairies, Inc. manufactures more than 383 million pounds (174,000 metric tons) of butter per year. Exports represent eight percent of total annual butter production. California Dairies’ 11 butter churns have the capacity to produce a variety of butter and cream products for commercial use, retail sales, food service accounts and export opportunities.

Butter production sizes range from 25-kilogram bulk boxes, 1-pound (Western and Elgin cut) and half-pound and quarter-pound (Western and Elgin cut) for print/retail sales, spreadable, continentals, and restaurant portion cups (5-gram and 8-gram). California Dairies, Inc. offers the following types of butter:

  • Salted 80%
  • Unsalted 80% - Culture and CMF
  • Export 82% - Lactic Acid and Plain CMF
  • Blends - Vegetable oil (canola, palm, coconut) butter blend
  • Anhydrous milk fat (AMF)

Cream Cheese

California Dairies is the manufacturer of cream cheese and Neufchatel made with 100% real cream and is able to produce cream cheese for commercial use, food service accounts and export opportunities.

California Dairies offers cream cheese in the following sizes:

  • 15-kilogram bulk box
  • 3-pound carton

Milk Powders

Annually California Dairies, Inc. manufactures 784 million pounds (356,000 metric tons) of milk powder or 40 percent of the milk powder produced in the United States. With 12 dryers and 16 evaporators, California Dairies, Inc. operates state-of-the art processing plants capable of producing a wide variety of powdered milk products including:

  • Nonfat dry milk and skim milk powder
    • High, medium and low-heat
    • High heat, heat stable
    • Low spore – medium heat, high heat and high heat, heat stable
  • Milk protein concentrates (MPC) - MPC 80 and MPC 85
  • Milk protein isolates (MPI)
  • Powder blends
  • Buttermilk powder

In addition, California Dairies, Inc. is able to meet a variety of export product specifications and individual country requirements. California Dairies, Inc. exports 49 percent of its powder production and markets all of its milk powders through DairyAmerica.
